Commercial Fryers
Commercial fryers are large kitchen appliances that deep fry just about anything.1 Commercial fryers have been known to deep fry everything from French fries to chicken wings and even cheesecake.1 Food is placed inside a basket which is lowered into a chamber in the fryer that is filled with some sort of cooking oil.
To prevent food from overcooking, commercial fryers often feature audible alarms, devices that raise and lower the basket into the oil automatically and electronic temperature controls.1 Other common elements include ventilation systems to decrease odors due to frying and oil filters that allow oil to be used for a longer period of time.1 Some commercial fryers even include features designed to prevent food crumbs from being overcooked.
Commercial fryers use different heat transfer systems depending on the model.1 Infrared or convection heating are known for their efficiency but they tend to be more expensive.1 Electric and gas fryers are the most widely used. |
